Bake at 350✯ for 45-55 minutes in the morning. Set a large skillet on the stovetop over medium heat. Pour the tater tots into the baking dish to thaw while you’re prepping the rest of the ingredients. To make ahead, prepare everything the night before in the pan you are going to bake in, cover and refrigerate overnight. Set out a 9 x 13 inch baking dish and spray with nonstick cooking spray.Top with green onions and/or hot sauce if desired. Bake at 350✯ for 45-55 minutes or until the eggs are set in the middle (test by poking with a knife).Top with the remaining cheese (the other 1/2 cup cheddar and 1/2 cup monterey jack). Top the egg mixture with a single layer of tater tots.Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour into a lightly greased 9×13-inch pan. In a large bowl, toss together tater tots, cooked sausage and cheeses. In a large skillet, cook sausage until no longer pink. If using a 9x13 pan, pour the cooked meat and veggies into the 9x13 and then pour the egg mixture on top. Lightly spray a 9×13-inch pan with cooking spray. Next, remove the casserole from the oven and allow it to cool slightly before serving. Cook your Pioneer Woman Overnight Breakfast Casserole for 45-60 minutes until the center is set and not jiggly. If using a cast iron skillet, pour the egg mixture right over the cooked meat and vegetables. Remove the wrapping or cover from the dish add the remaining cheese to the top.Add HALF of the cheese (that's 1/2 cup cheddar, 1/2 cup monterey jack). In a separate bowl, beat the eggs and milk with a whisk until well combined.Cook over medium high heat until sausage is browned and vegetables have softened. Chop the pepper and onion and combine with the sausage in a pan on the stove.Let it sit out for 10 minutes prior to baking. You can use a large cast iron skillet (like this one) if you would like to cook the entire casserole in it or you can just use any skillet and transfer to a 9x13 inch pan (like this one) to bake. Assemble casserole as instructed, but wait on adding the frozen tater tots until just before baking.1/2 of a large onion (I used red this time).
